this is a two for the price of one, pate sablée is my favorite pie crust and it's easy to make
- 250g of flour
- 120g of butter
- 80g of sugar
- 2 yolks (whites can be used to make financiers)
- 1 table spoon of water or amaretto
- some cinamon of lemon zest
- In a bowl, mix the flour and the butter at room temperature and cut into dices
- Once you get a "wet sand" texture, add cinamon, yolks, sugar and amaretto. Knead the dough until it is homogeneous but don't over do it. You should get a ball that is not sticky nor dry.
- Let it rest for a bit in the fridge (while you work on the filling)
- 7 big apples
- butter
- sugar
- strawberry jam
- Peel and dice 3 apples. Caramelized them in a pan with butter and sugar.
- Take the dough out of the fridge, flatten it by hand in a tarte/pie pan which you greased with butter first, use you knokkels to make the edges.
- Spread the caramelized apple from step #1
- Thinly slice 4 apples. Place them over.
- Bake at 400F for mmh I forgot, not long 15min or so max
- Spread a bit of strawberry (or any other berry jam) on top
