[feat] Add schema validator for editing patient records / patients

Now it's just react-editor with no validation; there's json schema defined for Patient Records - so could it be for Patients - then we should validate on save.

The other option would be to add dynamic form generation (eg: https://github.com/sagold/json-editor/tree/main/packages/headless-json-editor) instead of JSON editor
