It would be great if the plugins path could be mounted inside the Docker container. Currently we have to copy the plugin contents into the Composer environment after creation. Changes to plugins are not reflected in the local environment, requiring users to kill and recreate it.
I'd like to contribute this feature myself.

I'm looking into the code now. It seems like we're experiencing this because our plugins dir is not in the expected location, and the fix would be to enable supplying a plugin path upon environment creation. I'll work on that in my spare time.
