Problem sets that need to use 2 or more Angular features to solve, leaving it open to a test taker's imagination.

Great idea. I'm planning on making a click through exam so I can add small problems for users to solve

You can use gitbook to create an online book of exercises.

... having Plunker answers (for those that require code) ... or even better ... Plunker "broken problems" that one can fork to fix would be cool. Even creating the framework for us so we can all post Plunker examples would be awesome.

... related to this ... it would be cool if you used this is a potential pre-requisite for your angularclass ... having "you should know this before" or "if you already know this don't come!"

Another thought for you, since your class is broken into days ... you could sell online 1/2 days and have this outline help folks self assess where they may need assistance.
