(deps): support Jest 25 as a peerDep

- no changes needed as there were no breaking changes with Jest 25

- ran a manual test with Jest 25 that passed as well. auto tests will
  have to wait until TSDX upgrades Jest (and ts-jest etc)
  - or until we create a test matrix set-up
