The label would be configurable via the .env file or the GitHub actions env.

Currently brainstorming how to figure out what to do when an issue still has that label on it. ie. '5 days and counting' or '5 days and still labelled'

For the case where the label is still active on the issue/pr/discussion, let's go with the text "X time since label has been applied"
