chore: adding synthetic monitoring tests

This PR adds synthetic monitoring tests to Tracetest, allowing us to run tests for our demo envs on https://docs.tracetest.io/getting-started/try-live-demos/

Changes

• Added testing/synthetic-monitoring folder and Github action to trigger it.
