Is there a way to change the name and passwords or IP's of the PocketVJ's so I can have multiple RPi's running with WiFi at the same time?

You can edit following files for the IP change:

/etc/network/interfaces
/etc/udhcpd.conf

For the hostname change:

/etc/hostname

For the Wifi password:

/etc/hostapd/hostapd.conf
