Instead of needing to use --user-data-dir while running as root, this should be handled before Electron is launched.

This is getting pushed out beyond August due to relative low priority compared to my other issues.

I don't think supporting running via sudo is the right way to go. A permissions elevation dialog is the direction we should eventually go.
