Write docs on how override packages versions

We agreed that cardano.nix will not contain different versions for the same packages and that we need to add docs on how to override derivations to use different versions. The docs should suggest to contribute creating a PR in case the goal was supporting a more recent version (still the overriding makes sense if someone wants to use an old version for whatever reason).
