Just wanted to let anyone curious know that if you are in the same situation as me this works.
If you are on an M1 MacBook Pro, using UTM (which is basically pretty QEMU) and followed the instructions to install Ubuntu 20.04 Server arm64 from UTM's gallery, then using the ./ARM64_RPI.sh and ./install-driver.sh scripts worked out of the box for me.
