The current dating format in the header/footer is 'm/d/yyyy', I want to use this format dd/mm/yyyy.
dd/mm/yyyy
An example for a way to set this:

Sorry, something went wrong.
Its seems like chrome print is used to print the pdf, the date is set by chrome according to the user prefs.
I would have said to move the header and footer from chrome to the generated HTML but You can't know here to put it for each page
