Remove InfluxDB from charts, enable postgres stats by default

Now we can store analytics data in Postgres, there is a good argument for removing InfluxDB entirely from these charts:

• 1 less stateful DB to worry about
• No performance impact to core endpoints
• Simpler chart
• Customers wanting Influx can still set it up outside of this chart

So lets remove Influx entirely.

And set up postgres-backed analytics as the default setup for this chart.
