Build for multiple Platforms

This PR proposes to build the docker image for multiple platforms (primarily with the aim to support ARM / Apple silicon).

The PR also updates docker/build-push-action to v2.

I invite cleaner suggestions to extract the version tag.

• The version is now extracted from the git tag
• QEMU and Docker Buildx are set up to build for ARM architectures
• We push two tags: latest and a specific one based on the current git tag (e.g., v1)
