Enhance the settings/options in the config for more fine-tuned access to different functionalities.

--> give the user more control

TODOs:

set memote report maybe per step and not on or of
same as above but for growth and model output, if a good idea
some functionalities are set on per default, allow the user to turn those of as well
since the number of params may get quite high, create a basic and an advanced version of the config similar to the HQTB workflow for easier access to this workflow for beginners
- what would be useful to include, what can be a useful default for the rest
