Ingredients

  • 500g classic pizza dough
  • 60g soft butter
  • Handful parsley, finely chopped
  • 3-4 cloves garlic, crushed
  • Olive oil, for greasing

Notes

  1. Aim to ball smaller than golf balls.

Ingredients

  • 500g (17.6oz) classic pizza dough
  • 60g (2.1oz) soft butter
  • Handful parsley, finely chopped
  • 3-4 cloves garlic, crushed
  • Olive oil, for greasing

Method

  1. Prepare your pizza dough ahead of time. Our guide to making the perfect Classic Pizza Dough covers everything you need to know.
  2. Lightly grease your Cast Iron Skillet Pan with olive oil. Divide your dough into roughly 18-20 portions and use your hands to shape each portion into a small ball. Use the friction between the edge of your hands to pull and smooth the balls from the bottom.
  3. Place your terracotta ramekin dish in the centre of the skillet, then add your dough balls in a circular pattern around the ramekin and round the edges of the pan. Don’t worry If there are small gaps between the balls, they will expand in the heat of the oven.
  4. Once your dough balls are nestled in, cover the skillet with a tea cloth and leave to rest at room temp for 30 minutes.
  5. Fire up your Ooni pizza oven. Aim for 500˚C (952˚F) on the stone baking board inside. You can check the temperature inside your Ooni quickly and easily using the Ooni Infrared Thermometer.
  6. In a bowl, combine your soft butter, parsley and crushed garlic and mix together until combined. Set aside.
  7. Turn your hot oven completely off and place the skillet inside. Cook for 3-4 minutes in the residual heat, turning halfway through. This helps cook the bottom of the dough balls first. Once the balls have puffed up and are beginning to smell cooked, turn the oven back onto a low flame. Cook for a further 4-5 minutes, making sure to turn the skillet regularly to ensure an even cook.
  8. When the dough balls are cooked and golden brown, remove the skillet from the oven and place it on a wooden chopping board. Spoon your garlic butter into the hot ramekin, and brush an even layer of the butter mix across the dough balls with your pastry brush.
  9. Serve right away while the butter is still melting – tear away the dough balls and dip them into the warmed, garlicky herb butter. Be quick to grab yours, they won’t last long!

Ingredients

Dough Balls

  • 150ml warm water
  • 1 tsp sugar
  • 15g fresh yeast (or 2 teaspoons of dry yeast)
  • 225g plain flour
  • 1.5 tsp salt
  • Extra Virgin Olive Oil

Garlic Butter

  • 10ml extra virgin olive oil
  • 4 tsp butter
  • Half tsp of chopped garlic

Method

  1. Preheat oven to 230°C
  2. Add sugar and crumble fresh yeast into the warm water. Let stand for 10-15minutes until froth develops on the surface.
  3. Sift the flour and salt into a large bowl, make a well in the middle and pour the yeast mixture in.
  4. Mix the ingredients together until they bind.
  5. Dust your surface with flour, throw down the dough and knead for 10 minutes or until smooth, silky and soft. Leave the dough to rest until soft to the touch.
  6. Roll the dough in 1.2 long tubes and chop into 16 chunks. Place in an ovenproof pan and rest for another 30 minutes.
  7. Bake for 6 minutes or until golden.
  8. While cooking, make the garlic butter by blending the oil and garlic into a paste and blending with the butter.

Ingredients

  • Mozzarella block 150g, cut into 1cm cubes

Dough

  • Fast action yeast 2 tsp
  • Olive oil
  • Strong white bread flour 500g, plus more for dusting
  • Fine salt 1tsp

Herb butter

  • Unsalted butter 100g
  • Garlic 2 cloves, crushed
  • Flat-leaf parsley, rosemary and basil 1 tbsp, of each, finely chopped

Tomato dip

  • Garlic 1 clove, sliced
  • Passata 200g
  • Red wine vinegar 1/2 tsp
  • Chilli flakes
  • Basil leaves a few, chopped, plus a little more to serve

Method

  1. Mix the yeast, 2 tbsp olive oil, and a pinch of sugar into 300ml warm water in a jug until the yeast has dissolved.
  2. Tip the flour and salt into a bowl, and pour over the liquid. Knead in the bowl until you form a rough ball, then knead on a floured worksurface until smooth and elastic. Put into an oiled bowl and cover with clingfilm. Leave to rise in a warm place for 1 hour, or until doubled in size.
  3. Knock the dough back into the bowl with your hands, and divide into 18 balls (weigh them to make them identical, if you like).
  4. Roll each piece into a smooth ball, pushing a cube of mozzarella into the centre of each. Pinch the dough to seal in the cheese.
  5. Put the dough balls into an oiled ovenproof frying pan or baking dish (approx. 25cm diameter) leaving a small gap in between each to allow for proving. Cover with oiled clingfilm and leave again for 30 minutes.
  6. Heat the oven to 220C/fan 200C/gas 7. To make the herb butter, melt the butter then add the crushed garlic and herbs off the heat. Season well.
  7. For the tomato dip, fry the sliced garlic in a drizzle of olive oil for a minute, then tip in the passata, vinegar, and a pinch of chilli flakes and sugar. Simmer for 10 minutes until saucy, then stir in the chopped basil and cool.
  8. Uncover the dough and brush the dough balls with 2/3 of the garlic butter. Bake for 20 minutes until golden and puffed.
  9. Brush with the remaining butter and leave to cool for a few minutes. Serve with the tomato dip scattered with a few basil leaves, more chilli and a drizzle of olive oil.
