Charred onion & whipped feta flatbreads #290

  • Total Time: 1 hour 10 minutes

Ingredients

  • 300g strong white bread flour, plus extra for dusting
  • 7g fast-action dried yeast
  • 70ml olive oil, plus extra for proving
  • ½ tbsp olive oil
  • 3 onions, cut into chunky wedges
  • 5 thyme sprigs, plus extra leaves to serve
  • 2 tbsp honey, plus extra to serve
  • 100g feta
  • 50g Greek yoghurt
  • 2 tbsp rose harissa

Method

  1. Combine the flour, 1 tsp salt and the yeast in a large bowl. Make a well in the centre, and tip in 150ml warm water and the olive oil. Mix until combined, then knead on a lightly floured surface for 10 mins. Tip into a lightly oiled bowl, cover and leave to rise for at least 1 hr, or until doubled in size.
  2. Heat the oven to 200C/180C fan/gas 6. Heat the extra virgin olive oil in a frying pan over a high heat, and fry the onions for about 5 mins until beginning to char, stirring every so often. Tip the onions into a roasting tin with the thyme and honey. Roast for 15 mins until softened.
  3. Crumble the feta into a bowl with the yogurt, then whisk until smooth and creamy.
  4. Heat a dry frying pan over a medium heat. Divide the dough into four to six balls and roll out each into a 1cm-thick circle on a lightly floured surface. Fry, one at a time, for 2 mins on each side until cooked through and lightly charred. Top with the feta yogurt, harissa, roasted onions, a bit of extra thyme and honey, and a pinch of sea salt.

Notes

  1. Grill off some chicken breast and add this with the onion and whipped feta.

Whipped Feta with Roasted Tomatoes

Ingredients

  • 1 ½ lbs cherry tomatoes
  • 2 cloves garlic, very thinly sliced
  • 4 fresh thyme sprigs
  • 4 fresh oregano sprigs
  • 1 cup olive oil
  • kosher salt
  • 12 oz crumbled feta cheese
  • ¼ cup + 2 tbsp olive oil
  • ¼ cup water
  • 1 loaf crusty bread, sliced ½”
  • thyme + oregano leaves, to garnish
  • flaky sea salt
  • freshly cracked black pepper

Method

  1. Preheat the oven to 375F°. Add the cherry tomatoes, sliced garlic, and fresh herbs to a 12″ cast-iron skillet. Cover with the olive oil, season with a pinch of salt, and toss to combine. Roast for 35-40 minutes, or until the tomatoes are soft and caramelized.
  2. Preheat the grill over medium-high heat. Coat each slice of bread with a good amount of olive oil on both sides. Grill the bread until slightly charred and crisp, just a minute or so per side. Transfer the bread to a cutting board and cut each piece in half.
  3. In a food processor, combine the feta, olive oil, and water. Blend for a few minutes until smooth and creamy, scraping down the sides of the bowl as needed.
  4. Spoon the feta cheese into a bowl. Add the roasted tomatoes over top, along with a generous drizzle of the oil from the skillet. Top the tomatoes with a few thyme and oregano leaves, flaky sea salt, and freshly cracked black pepper. Serve the bread alongside.

Ingredients

Roasted Tomatoes

  • 1 package tri-colour cherry tomatoes
  • 1/3 cup extra virgin olive oil
  • Salt + pepper

Whipped Feta Dip

  • 8 oz feta cheese, crumbled
  • 1/2 cup extra virgin olive oil
  • 2 tbsp honey
  • 1-2 bunches thyme
  • 1-2 bunches oregano
  • 1/4 cup cream cheese
  • 1/4 cup water
  • Lemon zest
  • Salt + pepper

Toasted Baguette

  • 1 baguette, sliced
  • 2 tbsp extra virgin olive oil
  • salt + pepper

Method

  1. Preheat oven to 375F degrees. Line a baking sheet with parchment paper. Add cherry tomatoes and top with 1/3 cup olive oil, salt and pepper. Bake for 20-25 minutes.
  2. Add crumbled feta, cream cheese, water, 1/2 cup EVOO to a food processor. Process for 2-3 minutes. Add lemon zest, black pepper and honey to the mixture and process for 2 minutes.
  3. Add feta dip to a bowl and remove roasted tomatoes from the oven. Add roasted tomatoes and olive oil on top of the dip. Garnish with thyme, oregano and black pepper. Serve with grilled bread and enjoy!

Notes

  • For baguette: slice baguette and place on a baking sheet lined with parchment paper. Preheat oven to 350F degrees. Brush baguette with olive oil, salt + pepper. Place in oven for 10-12 minutes. Enjoy with dip or as crostini’s.
