I worked at a family run business that arranged a weekly team lunch where we would all come together once a week and have lunch together. It was a great opportunity to explore different foods but also come together and share different stories.
One of my all-time favourites was the Thai food from a local restaurant a few minutes away from the office.
The chef and restaurant owner cooked this incredible Prawn Pad Thai, while this is not her recipe I always think of her dish and the team lunches when I have eat a Prawn Pad Thai.

  • Serves: 2 servings
  • Prep Time: 15 minutes
  • Cook Time: 5 minutes
  • Total Time: 20 minutes

Ingredients

  • 2 eggs, beaten
  • 2 garlic cloves, finely chopped
  • 200g king prawns, shelled, deveined and heads removed if preferred
  • 1 tbsp sweet radish, or tamarind
  • 150g handful bean sprouts
  • 3 spring onions, chopped
  • 1 red chilli, finely chopped
  • 300g rice noodles, soaked in warm water for 8-10 minutes, then drained and dried

Sauce

  • 2 tbsp oyster sauce
  • 2 tbsp fish sauce
  • 2 tbsp dark soy sauce
  • 1 tbsp light soy sauce
  • 3 tbsp sugar
  • drizzle sesame oil
  • 1 tsp rice vinegar
  • 2 tbsp water

To serve

  • Chilli powder, to taste
  • 4 tbsp roasted peanuts, crushed
  • 1 tbsp, sugar
  • Lime quarter

Method

Sauce

  1. Mix the oyster sauce, dark and light soy sauce and sugar.
  2. Add the sesame oil, rice vinegar and water and mix together until fully dissolved.

Pad Thai

  1. Soak noodles in hot water for 8-10 minutes then drain.
  2. Run a drizzle of sesame oil over the noodles then dry on a tray with a towel.
  3. Marinade the prawns with a pinch of salt, sugar and a drizzle of sesame oil.
  4. Add cooking oil to the wok over medium high heat.
  5. Add eggs straight in and scramble them up.
  6. Add the garlic and fold the egg over the top.
  7. Add prawns to the half-cooked eggs and cook for about 2-3 minutes until the prawns are cooked through.
  8. Add the noodles and bring the egg over the top of the noodles.
  9. Add the Pad Thai sauce and turn up to high heat. Mix well and cook for about a minute until the noodles take on the golden brown colour.
  10. Turn off the heat and add beansprouts and chives; the heat from the noodles will cook them just right.
  11. Serve with the garnish.

Notes

  1. Try doubling the ingredients for the sauce and cooking one serving at a time.

Here's my shortcut version of pad thai. Stir in soy sauce and brown sugar, add a sprinkle of cilantro and roasted peanuts—no one will guess the secret ingredient is marinara sauce. —Erin Chilcoat, Central Islip, New York

Ingredients

  • Prawns
  • Rice
  • 2 tbsp Fish sauce
  • 3 tbsp Sugar
  • 1 tbsp sweet radish
  • Water
  • 2 eggs
  • 3 Spring onions
  • 1 handful beansprouts

Serve with:

  • Crushed peanuts
  • Sugar
  • Chilli powder

Thai Pad See Ew

Ingredients

  • Garlic, finely chopped
  • 2 eggs, beaten
  • Tender stem broccoli
  • Rice noodles, soaked in water 8-10 mins

Sauce

  • 2 tbsp oyster sauce
  • 2 tbsp dark soy
  • 1 tbsp light soy
  • 1-2 tsp sugar
  • 2 tsp sesame oil
  • 1 tsp rice vinegar
  • 2 tbsp water

Method

  1. Soak noodles.
  2. Dry noodles and drizzle sesame oil over the rice noodles
  3. Mix salt, sugar and sesame oik over prawns
  4. Cook the prawns on a high-heat, once cooked, remove from the Wok
  5. Blanch the broccoli for 1 min
  6. Add the egg to a hot Wok, don't let it burn
  7. Add the garlic, fold in the egg
  8. Handleful of noodles, don't overflow it
  9. Add the sauce to finish
