dev: chg: fix some configs to be compatible with rehoming to eu-west-1

Description

This PR changes default ami to a eu-west-1 compatible one.
Also, it changes some default values to reduce AWS costs (when ported to local .env files too...)

• Bugfix (non-breaking change that solves an issue)
• New feature (non-breaking change that adds functionality)
• Breaking change (change that is not backwards-compatible and/or changes current functionality)
• New test case for remote devnet
