Adds the YARD gem to start building out more detailed documentation. There are already auto-generated docs online (because we publish on RubyGems):

The annotations added don't cover 100% of the code due to time constraints but I've documented the main classes & methods of interest.
Once this PR is merged & a new release is made the extra annotations should appear on the auto-generated documentation site.
